Perfect Choclate lava cake

  • 4 teaspoons sugar
  • 1/2 cup butter, cubed
  • 4 ounces semisweet chocolate, chopped
  • 1 cup confectioners' sugar
  • 2 eggs
  • 2 egg yolks
  • 1-1/2 teaspoons instant coffee granules
  • 3/4 teaspoon vanilla extract
  • 6 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • Whipped cream, optional
  • Additional confectioners' sugar, optional

Directions

  • Grease the bottom and sides of four 6-oz. ramekins; sprinkle each with 1 teaspoon sugar. Place ramekins on a baking sheet; set aside.
  • In a medium microwave-safe bowl, melt butter and chocolate; stir until smooth. Stir in confectioners' sugar until smooth. Whisk in the eggs, egg yolks, instant coffee and vanilla. Stir in flour and salt; spoon batter into prepared ramekins.
  • Bake at 400° for about 12 minutes or until a thermometer reads 160° and cake sides are set and centers are soft.
  • Remove ramekins to a wire rack to cool for 5 minutes. Carefully run a small knife around cakes to loosen. Invert warm cakes onto serving plates. Lift ramekins off cakes. Serve warm with whipped cream or sprinkle with additional confectioners' sugar if desired. Yield: 4 servings.

Chinese Lemon Chicken




Ingredients:

1) 2 tbsp Dry sherry

2) 4 Green (spring) onions, chopped

3) 1 Piece of root ginger, shredded

4) 500gm Chicken, cut into 1 inch strips

5) 2 Celery sticks, sliced

6) 125gm Button mushrooms, quartered

7) 1 Green pepper, cored, seeded and sliced

8) 2 tbsp Light soy sauce

9) Shredded rind of 2 lemons

10) A few Lemon slices, for garnish

11) 2 tbsp Oil, for stir-frying

Method:
1. Put the sherry, spring onions and ginger in a bowl.
2. Add chicken and toss well to coat. Leave to marinate in the bowl for 15 minutes.
3. Heat the oil in a wok or frying pan.
4. Add celery, mushrooms and the green pepper. Stir-fry for one minute.
5. Add the chicken and marinade and cook for 3 minutes.
6. Stir in the soy sauce and lemon rind. Cook for one minute.
7. Garnish with lemon slices and serve hot.
